There was an unlikely victim embroiled in last week’s failed Israeli moon mission: A covert recipe for chile con queso. According to the Austin American-Statesmen , a beloved recipe from the city’s Kerbey Lane Cafe chain of restaurants was on board the ill-fated Beresheet spacecraft , which crashed into the lunar surface.

Austin mayor Steve Adler apparently selected the top-secret queso recipe for inclusion in the Arch Lunar Library , which was intended to serve as a time capsule left behind on the moon. The recipe, along with 25,000 books and other resources (including the entirety of the English-language Wikipedia), was “etched in microscopic analog form on a radiation-proof nickel Nanofiche disk.” It’s unknown whether or not the disk survived the crash landing.

“We choose to send queso to the Moon — and maybe someday chips as well, not because these things are easy, but because they are hard,” Adler wrote in an accompanying letter, which was intended for an extraterrestrial audience. “The challenge to eat queso in zero gravity is one that we are willing to accept, one we are unwilling to postpone, and one we intend to win, among other key challenges, like next time remembering the chips.”

Queso – a smooth and piquant marriage of melted cheese and chili peppers – is a Tex-Mex and American Southwest staple with origins in Chihuahua, Mexico. According to author Lisa Fain , in Tex-Mex cuisine it’s predominantly made with processed cheese – American or Velveeta – but can also be made with cheddar or Monterey Jack, and a variety of chilies (jalapeño, New Mexican or poblano) either canned, pickled or roasted.

Does Kerbey Lane Cafe’s recipe call for Velveeta or American cheese? Monterey Jack or cheddar? According to Munchies , the recipe has now been exposed in the contents of Adler’s letter, but the type of cheese to be used remains “redacted for Earthlings.”
